Aswini Elanggho
Aswini Elanggho is the founder of AmourCoco (Amourcoconut Limited), a London-based brand bringing ethically sourced coconut products to kitchens across the UK and Europe.
She grew up in Jaffna, Sri Lanka, where coconut was part of everyday life. Her father climbed the coconut trees in their backyard, and her mother cooked with every part of the fruit, from family meals and traditional recipes to home remedies. Nothing was wasted, and that way of cooking shaped how she thinks about food today.
Her family later moved to the UK and rebuilt their lives from scratch. Years on, she started AmourCoco to carry those traditions forward and to share the natural goodness of coconut with people who cook at home.
The AmourCoco range covers coconut water, coconut milk, coconut aminos and more. On the AmourCoco journal and recipes she writes about how to cook with coconut products and what to look for when buying coconut-based products.
