Chicken, Sweet Potato and Coconut Curry: A Mild, Family-Friendly Curry

Not every curry needs to bring the heat. This one is gently spiced, genuinely one-pot, and mild enough to introduce kids to curry without losing flavour — sweet potato and lentils bulk it out naturally, while AmourCoco low-fat coconut milk brings everything together into a smooth, comforting sauce.

Ingredients

Serves 4
  • 1 tbsp sunflower oil
  • 2 tsp mild curry paste
  • 2 large boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 medium sweet potatoes, peeled and cut into bite-size pieces
  • 4 tbsp red split lentils
  • 300ml chicken stock
  • 400ml AmourCoco low-fat coconut milk
  • 175g frozen peas
  • Salt and pepper, to taste

Allergens: check each ingredient’s label.

Method

  1. Step 1

    Fry the Curry Paste

Heat the oil in a deep frying pan or wok over medium heat. Stir in the curry paste and fry for 1 minute until fragrant.

💡 Pro Tip: Frying the paste briefly in oil first, before anything else goes in, brings out noticeably more flavour than stirring it into the liquid later.

  2. Step 2

Add the Chicken, Sweet Potato, and Lentils

Add the chicken, sweet potato, and lentils, stirring to coat everything evenly in the curry paste.

  3. Step 3

Pour in the Stock and Coconut Milk

Pour in the chicken stock and coconut milk. Bring to the boil, then reduce the heat and simmer for 15 minutes, until the chicken is cooked through and the sweet potato is tender.

  4. Step 4

    Add the Peas

Tip in the frozen peas, bring back to the boil, and simmer for a further 4–5 minutes.

  5. Step 5

    Season and Serve

Season to taste with salt and pepper, then serve hot.

Serving Suggestions

Serve with rice noodles, basmati rice, or warm chapatis for a complete meal. For a milder version suited to younger kids, use a reduced curry paste quantity and build heat gradually at step 1 rather than adjusting after cooking.
