Method

Step 1
Brown the Chicken
Season the chicken with the salt and pepper. Heat the oil in a large, deep frying pan over medium-high heat and brown the chicken in two batches for 4 to 5 minutes each, until golden on the outside. Remove to a plate.
💡 Pro Tip: Browning in batches stops the pan from steaming the chicken, which gives better colour and flavour in the finished sauce.
-
Step 2
Soften the Vegetables
In the same pan, cook the onion and red pepper over medium heat for 5 minutes, until softened.
-
Step 3
Add the Aromatics and Spices
Stir in the garlic, ginger and chilli and cook for 1 minute. Add the turmeric and cumin and stir for about 30 seconds, until fragrant.
-
Step 4
Build the Sauce
Pour in the stock, scraping up any golden bits from the bottom of the pan, then add the coconut milk and stir well.
-
Step 5
Simmer the Chicken
Return the chicken and any juices to the pan. Bring to a gentle simmer and cook, uncovered, for 15 to 18 minutes, stirring occasionally, until the chicken is cooked through with no pink meat and the sauce has thickened slightly.
💡 Pro Tip: Keep the heat low and steady. Low-fat coconut milk can split if it boils hard, so aim for a gentle bubble rather than a rolling boil.
-
Step 6
Finish and Serve
Stir in the lime juice and taste for seasoning. Scatter with fresh coriander and serve over rice, with flatbread, or alongside cauliflower rice.

Serving Suggestions
Serve with fluffy basmati rice or warm flatbread to soak up the sauce. For extra heat, add a pinch of chilli flakes with the spices at step 3, rather than at the end. Stir through a handful of spinach in the last 2 minutes for added greens.
