Method

Step 1
Cook the Rice First
Combine the rinsed black rice and water in a large saucepan. Bring to the boil, then reduce the heat, cover, and simmer for 25 minutes. Remove from the heat and let it stand, covered, for a further 10–15 minutes before fluffing with a fork.
💡 Pro Tip: Black rice takes noticeably longer than white rice, so start this step before anything else.
-
Step 2
Make the Curry Paste Mixture
While the rice cooks, whisk together the curry paste, peanut butter, coconut aminos, and brown sugar in a small bowl until smooth, with no lumps of peanut butter remaining.
-
Step 3
Brown the Chicken
Heat a large, heavy-based pan over medium-high heat and spray lightly with oil. Add the chicken and cook, stirring occasionally, for about 5 minutes until lightly browned on the outside.
-
Step 4
Build the Sauce
Stir the curry paste mixture into the pan, coating the chicken evenly, then pour in the coconut milk. Bring to a gentle simmer.
-
Step 5
Add the Vegetables
Add the courgettes and green beans, cooking for 5–10 minutes, stirring occasionally, until the sauce has reduced slightly and the chicken is cooked through with no pink remaining.
-
Step 6
Finish with Greens
Stir in the spinach and peas and cook for just 1 more minute — enough to wilt the spinach without overcooking the peas.
-
Step 7
Serve
Spoon over the black rice and finish with a scattering of fresh coriander.

Serving Suggestions
If you prefer it spicy, add an extra tablespoon of curry paste at step 2 rather than adjusting it later — the coconut milk and peanut butter mellow spice significantly once everything's combined, so it's easier to build heat in early. If you're cooking for a gluten-free household, double-check your specific brand of curry paste, as some rely on wheat-based thickeners even though the core ingredients are naturally gluten-free.
Why You'll Love This
A rich, restaurant-style curry that comes together on a weeknight. AmourCoco coconut milk gives it a clean, thick sauce without heaviness. Coconut aminos adds savoury depth without soy sauce's sharp saltiness. Easily adjusted for a spicier or milder finish. A great way to put two AmourCoco staples to work in one dish.
