Ingredients
Serves 2- 1 cup fresh pineapple, roughly chopped
- 1 cup AmourCoco 100% coconut water
- ½ tsp fresh ginger juice (or finely grated ginger, squeezed through a sieve)
- Juice of 1 lime, plus extra lime slices to serve
- 1 tsp honey or maple syrup (optional, to taste)
- Plenty of ice
Allergens: check each ingredient’s label.
Method
-
Step 1
Blend the Pineapple
Blend the fresh pineapple chunks until smooth, then strain through a fine sieve to remove the pulp if you prefer a clearer drink.
💡 Pro Tip: If your pineapple is very ripe and sweet, skip the honey entirely — taste first before adding any sweetener.
-
Step 2
Combine the Base
In a cocktail shaker or jug, combine the pineapple juice, coconut water, ginger juice, and lime juice.
-
Step 3
Sweeten if Needed
Taste and stir in honey or maple syrup only if the pineapple needs it — this keeps the drink from tasting overly sweet.
-
Step 4
Shake or Stir with Ice
Add a handful of ice and shake well, or stir thoroughly if mixing in a jug, until well chilled.
-
Step 5
Serve
Pour into chilled glasses filled with ice, and finish with a slice of lime.

Serving Suggestions
For a slushier, more textured drink, blend everything together with a handful of ice instead of shaking separately. If you prefer a stronger ginger kick, add it gradually — ginger juice can overpower the pineapple quickly if added all at once.
Why You'll Love This
Ready in under 5 minutes with no special equipment required. A naturally hydrating alternative to sugary fruit drinks. AmourCoco coconut water adds electrolytes without diluting the pineapple's flavour. Easily adjusted for more citrus or ginger to suit your taste.
