Method

  1. Step 1

    Soften the Aromatics

Heat the oil in a large saucepan over medium heat. Add the onion and cook for 4–5 minutes until softened, then stir in the garlic and ginger and cook for a further minute until fragrant.

  2. Step 2

    Bloom the Spices

Add the cumin, ground coriander, and chilli flakes (if using), stirring for about 30 seconds until fragrant — this helps develop the flavour before the liquid goes in.

💡 Pro Tip: Don't skip this step or rush it; blooming the spices in oil first brings out far more depth than adding them straight into the stock.

  3. Step 3

    Simmer the Sweet Potato

Add the sweet potato and vegetable stock. Bring to the boil, then reduce the heat and simmer for 18–20 minutes, until the sweet potato is completely tender.

  4. Step 4

    Add the Coconut Milk

Remove from the heat and stir in the coconut milk. Season with salt and pepper to taste.

  5. Step 5

    Blend Until Smooth

Using a stick blender, blend the soup directly in the pan until completely smooth. Alternatively, blend in batches in a countertop blender.

  6. Step 6

    Serve

Ladle into bowls, finish with a drizzle of coconut milk and a scattering of fresh coriander, and serve warm.

Serving Suggestions

For a heartier meal, serve with warm flatbread or crusty bread on the side rather than as a starter alone. If you prefer more heat, add an extra pinch of chilli flakes at step 2 rather than adjusting at the end — the coconut milk mellows spice significantly once blended in. For a richer finish, swirl in a spoonful of coconut cream on top just before serving rather than changing the base recipe.

Why You'll Love This
